enhanced refritos
Jan. 7th, 2010 11:36 pm(3rd in a series of simple dinner recipes that are less complicated than gourmet or from-scratch cooking but above the "open package, put in microwave" level)
1. In a medium-sized deep pan, melt 1 tbsp butter and quickly sauté 1 small zucchini and about 1/4 onion, chopped.
2. Add contents of a large (30 oz) can of vegetarian refried beans and half of a 16 oz jar of salsa (preferably medium potency, chunky)
3. Heat gently, while stirring, until smooth and heated through.
4. Serve with grated cheese and a big bag of low-salt tortilla chips. No utensils necessary for this one. Do not serve with sour cream, because you forgot to buy any.
