What the F is "cloudflare"? It's telling me there's an error and I can't get to half the websites I want to visit. Nothing wrong with the websites, it says, it's an internal error with them. What good is a security service that doesn't work?

I had that problem too this morning, but it cleared up later in the morning.

They're a cloud server company. It means the website you're trying to get to is hosted/served by them. I was specifically getting a "Ashburn Cloudflare Error" message, so presumably it's that one server site out of many Cloudflare sites that was having a problem.

Cloudflare is primarily DDOS protection-- making sure your site stays up when some malicious person decides to flood it with traffic.

That's the problem - everything breaks occasionally, and when it's something that half of the internet depends on (because for whatever reason there aren't that many competitors) then suddenly things get a lot less usable.
