leftover turkey

So far:
1) Sauteed with pasta and vegetables in Indian butter chicken sauce;
2) Sauteed with pasta and vegetables in French lemon butter sauce;
3) Chinese chicken/corn/egg-drop soup, with turkey instead.

Next:
1) Turkey tortilla soup?
2) Turkey fried rice?

Mine, so far:

Turkey-and-stuffing sandwiches
Turkey chile verde
Beans cooked in turkey stock
Cauliflower soup made with turkey stock
Turkey pot pie with sage biscuit crust
Bits of turkey skin crisped in the oven as snacks (and the pope's nose as chef's perk)

Tomorrow I'm thinking curry, and that'll be the last of it (except for the tub of leftover chile verde in the freezer, and the remaining stock which may fuel next year's gravy)

Tacos are not a regular dish around here, but ... quesadillas are. Chicken quesadillas with turkey instead of chicken! I can do that.

In my paternal grandmother's case, leave the carcass in the fridge for two weeks, then wait till it climbs out by itself.
